This sweet potato spaghetti could not be easier!
I have tried zucchini ‘spaghetti’ many times, and while I’m a fan, my family is not. These ‘spaghetti’ however were a hit!
Ingredients:
Serves 3
1 large sweet potato, washed and peeled
*you will need a spiralizer to get the spaghetti like consistency
Cut sweet potato in half and spiralize each half. Voila!
In this pic you will see two different options for spiralizing. One is more like ‘fettuccini’, but the ‘spaghetti’ version definitely won in taste.
In a pan, heat butter, ghee or coconut oil over med heat. Add spaghetti and sauté for about 5 min, until sweet potato is cooked but not mushy. Top with your favourite sauce and greens.
