Made these for Julian for school last week. He’s a great eater at home, but I’m not sure if that will continue at school, so I want to make sure that I give him lot of nutrient dense foods. Well, they turned out great! They’re crunchy, tasty and great to use for mini sandwiches, oh and not just good for kids.
If you wonder why I sprout the buckwheat, it’s to make it more digestible and easy for your body to absorb it’s nutrients.
Ingredients:
- 2 garlic cloves, minced
- 1 cup of sprouted buckwheat *
- 1 cup of chia seeds
- 3 cups of water
- 2 cups of carrots, grated
- 4 med sized tomatoes
- 2 handfuls’ of kale, deveined and chopped
- 1 tsp grated ginger, or organic dry ginger
- 1 tbsp sea salt
- 1 tsp paprika, or smoked paprika
- pepper to taste
1. Place chia seeds in a food processor.Pour in 2 cups of water and let sit for 30 min.
2. After 30 min, place remaining ingredients in the food processor and process until smooth.
Dehydrator version: Spread the mix onto your non-stick dehydrator sheets, about ½ inch thick. Dehydrate at 140° for 6 hours, flip and then dehydrate another 6 hours, until dry and crunchy. Be sure to flip carefully by using another dehydrator sheet
Oven version: Spread onto a baking sheet (s), lined with a silicone liner or parchment paper.Set your oven as low as it will go (between 150-200°) and bake for 3-4 hours. All ovens are different; so make sure it is fairly dry on one side before flipping. Flip using another tray with parchment paper.
*Make sure that you buy organic buckwheat groats, otherwise it may not sprout! Also, remember that the quality of water you use to sprout also makes a difference! Filtered water is ideal.
Rinse the buckwheat and then pour into a wide colander with small holes. Place colander on top of a dish so that excess water can drain onto it and keep buckwheat moist. Rinse and repeat process throughout the day, as many times as you remember, but at least 2-3 times, until you see little sprouts appear. Rinse thoroughly before use.
Dip in hummus, top with organic cold cuts, or cheese for a great snack!
