Sweet treats don’t have to be bad for you, it’s all about using the wholesome ingredients so your blood sugar doesn’t take a hit.
There is a huge difference between cookies made with processed ingredients, which are empty calories vs a cookie that your body can actually use for energy!
These energy truffle recipe definitely has room in your cookie exchange.

ENERGY TRUFFLES
Ingredients:
- 2 cups toasted pecans
- ½ cup coconut butter
- ½ cup coconut oil
- 2 cups organic almond butter or organic peanut butter
- 1/2 cup coconut flour
- 1/2 cup unsweetened cocoa powder
- 1 cup shredded, unsweetened coconut, toasted
- 1 Tablespoon vanilla extract
- 1/2 teaspoon sea salt
- 1/3 cup macadamia nuts, ground. Walnuts may also work well.
In a food processor, grind the pecans. Mix in the coconut butter, coconut oil and almond butter. Mix in the coconut flour and cocoa powder. Blend thoroughly.
Transfer the mixture to a large mixing bowl and mix in the shredded coconut, vanilla extract and the salt.
Form small balls with the chocolate mixture. Roll each ball in the ground macadamia nuts.
Refrigerate to harden, and store in an airtight container in the fridge.
