Love cauliflower rice! It’s a great way to cut starch from your diet, but it’s also more nutrient dense than white rice.
Serves 4-5
Ingredients:
1 small cauliflower head, washed and broken up into small pieces
1 large yellow onion, chopped
1 tsp mild curry powder
1 tsp turmeric powder
1 tsp cinnamon
1 tsp salt
3 garlic cloves, peeled and chopped
1 carrot, peeled and grated
2 celery stalks, washed and chopped finely
3 small ripe tomatoes, chopped
2 large handfuls of kale, washed deveined and chopped finely
¼ cup water
Cooked/Grilled Chicken, chopped into small pieces (great way to use leftover chicken)
Place cauliflower in a food processor and process into fine rice like pieces. Set aside.
In a large pan, melt some coconut oil over medium heat. Add onions and sauté until fragrant. Add spices and mix. Add garlic, carrot, celery, and tomatoes and mix. Cook for 2 min. Add kale and mix. Cook for another 2 min. Add cauliflower rice & water. Mix and cook for about 4 min. Add chicken and cook for 2 minutes to warm. Taste and add a touch of salt if necessary.
Serve right away.
*If you prep your meals, you can chop your veggies ahead of time to make things easier!
