As promised in last week’s blog post, 3 Delicious Ways to Cut Starches & Grains , here is the recipe that utilizes the “Cauliflower Rice” I told you about! Enjoy!
Cauliflower Fried ‘Rice’ with Grilled Shrimp
Ingredients:
- approx 12-15 raw shrimp, deveined and peeled
- Salt, pepper to taste
- Chilli flakes
- 2 cups cauliflower “rice” (recipe below)
- 1 Tablespoon coconut oil
- 1/2 cup chopped carrots
- green onion, chopped
- garlic clove, minced
- 1 whole egg, beaten
- Organic wheat free Tamari or Coconut Aminos
- sea salt, to taste
-In the version pictured I also added some sautéed kale, which was really good!
*Cauliflower Rice:
1 head of cauliflower, trimmed, washed & dried
Directions: Place raw cauliflower pieces in a food processor and process until small ‘rice like’ pieces.
Directions:
Season shrimp with salt, pepper and chili flakes.
In a skillet, heat coconut oil over med heat. Add raw shrimp and cook about 2 min per side. Remove shrimp from heat, add a bit more coconut oil to skillet and sauté the garlic, and carrots, add a splash of water prevent sticking, and cook for about 4-5 minutes, or until crisp-tender. Then add the green onion and egg, and mix quickly.
Finally add the cauliflower rice, tamari and salt. Mix and heat for another 4-5 minutes until piping hot. Adjust seasoning, by adding extra, soy sauce salt, pepper.
Place cauliflower rice on serving plates and top with grilled shrimp.
